Yes, you are allowed to monetize multiple youtube channels. You only get one AdSense account. Remember that channels have to be 'invited' or approved for partnership (though YouTube Partner program) to monetized though AdSence. After that invite/approval you just add it to your AdSense account.

Many have more than 5 channels in this way. Under 'monetization settings' on your youtube channel you can change/add AdSense accounts.
You have to use the same Adsense account. You should not have multiple adsense account (individual adsense). Multiple adsense account is against google TOS.
